Apple Crumble Muffin


Salam larut malam.Its already 12 something at night,but I"am still not sleepy.Little laling went to bed around 10 something tonight so I decided to make this muffin.Saja nak habiskan 2 biji apple hijau yang masih ada kat dalam peti.Last week I"v made the apple cake and managed to take some to kindie for my teachers to tried ( the rest off the apple cake my 1st princess angkut gi opis),Kesian tak cukup sebab sikit sangat.So tonight I thought I"ll baked this muffin for their breakfast tomorrow.Hope they will like it.

  200g plain flour

100g sugar

2 teaspoons baking powder

1/4 teaspoon bicarbonate of soda

1 teaspoon cinnamon

1/4 teaspoon allspice

1/4 teaspoon salt

2 large eggs

240ml soured cream ( dont have a stock so I replaced it with 1 cup of milk + 2 teaspoon of vinegar)

60g butter, melted

1 large apple - peeled, cored and finely diced(I used 2 green apples)

Crumble topping:

50g walnuts, chopped

40g plain flour

3 tablespoons sugar

30g cold butter, diced finely

1/4 teaspoon cinnamon

Preparation method
1.

Preheat oven to 190 C / Gas 5. Line a muffin tray with paper cases.
 

2.

Mix the flour, sugar, baking powder, bicarb, spices and salt.
 

3.

In a bowl, whisk the eggs. Stir in the soured cream and butter.
 

4.

Stir the diced apple into the flour mixture. Add the egg mixture. Mix everything well with a spatula until just moistened (you may still see a few dry spots). Pour the batter into the prepared muffin cases.
 

5.

For the crumble topping, rub all the ingredients together with your fingertips and sprinkle over the muffins. Bake for 25 minutes in the preheated oven, or until a skewer comes out clean. Cool the muffins on wire cake rack and cool completely before serving.

* for my own reference : next time I bake this must double up the recipe for the topping

  2. muffin ni lembut sue bila dimakan keesokan hari.Tapi topping dia kena buat lebeh sikit.tak cukup kalau ikut resepi tu.
