Meatballs Stuffed With Spinach

 
Hai everyone, I baked this last weekend for dinner.Its quite nice for a change. Tasted more like beef burger without a bread.I served this with baked beans,eggs some salad together with bread and butter. Also made an extra sauce by mixing the extra sauce in the pot with the juice from the baked meatball. Ingredients
Meatballs:
 
·         500g ground beef
·         1 onion, grated
·         1 egg
·         2 tbsp breadcrumbs
·         1 tsp salt
·         1 tsp black pepper
·         1 tsp cumin
Filling:
·         300g spinach, roughly chopped
·         1 onion, chopped
·         ¼ cup milk
·         2 tbsp olive oil
·         a pinch of salt
·         1 tsp black pepper
Sauce:
·         1 tbsp tomato or pepper paste
·         2 tbsp olive oil
·         ¼ cup water
·         ¼ cup kasar cheese, grated (use any melting cheese you like) - I used moza cheese




Start with preparing meatballs. Mix ground beef, grated onion, breadcrumbs, egg and spices in a large bowl. Combine them very well with your hands. Cover it and wait about 20 minutes in refrigerator.
Meanwhile you can prepare the filling. Saute onion with olive oil. Add spinach and stir. Cook it for about 10 minutes, add salt, black pepper and milk, stir. Take it from stove.
Take the meatball mixture from refrigerator. Take a piece as big as an egg, make it a ball. Then make a hole in this ball with your thumb. Repeat this for the rest. Place them in an oven tray and cook at 180C until golden brown.
Prepare the sauce at this time. Heat olive oil, add tomato or pepper paste and stir. After a few minutes, add water and boil.
Share the spinach filling in these meatballs. Pour the sauce on meatballs. Top each meatball with grated cheese (P.Ros used cheddar) and put them back in oven. Cook for another 10 minutes.
Serve hot with shepherd’s salad.
